In the quinoa flare at home these days. Trying many of the rice based dishes, replacing rice with Quinoa. Vangibath is a popular dish in the state of karnataka, India. It is made with rice, brinjal and a spicy powder. Vangibath powder is very aromatic powder made with many spices. Adding a dash of tamarind and jaggery will bring out a great balance in taste for this dish. Enjoy this spicy, tangy and slightly sweet flavored dish either for dinner or lunch.. If you are watching on carbs like me, then use Quinoa or Couscous instead of rice :)…
long brinjal 2
quinoa 3 cups
water 5 1/4 cups
MTR vangibath powder 3 tblsp
red chillies 2
garam masala 1 tsp
tamarind paste 1 tsp
jaggery powdered 1 tsp
salt to taste
oil 6 tsps
Cook quinoa in the water. Fluff with a fork and set aside.
Wash and cut the brinjal into 1 inch long pieces.
Heat oil in a pan, add the brinjal and let cook on low flame covered.
Stir occasionally till brinjal is cooked.
Add the vangibath powder, salt, sugar, garam masala, tamarind paste and mix well.
Pour the mixture over the cooked quinoa and mix well.
Serve hot with cucumbers or chips and enjoy!!
