Quinoa with pesto and edamame

Quinoa a high protein grain, can be flavored with any kind of sauce. Pesto being a favorite in my family we add it to Quinoa, pizza to name a few. Try this quick recipe…


basil pesto 2 tsps
cooked quinoa 1 cup
onion 1/2 cut lengthwise
edamame 1/2 cup
carrots shredded 1/2 cup
red chilly flakes 1 tsp
salt to taste
pepper 1/2 tsp
olive oil 3 tsps


Heat the olive oil in a pan.
Add red chilly flakes, onion and edamame, saute till onion turns pale pink in color.
Add in the shredded carrots for some color.
Add salt, pepper, pesto and cooked quinoa and mix well.
Enjoy this high protein dish by itself or with a salad on the side.
