Mango bread

Homemade bread is such an awesome treat to have every morning for breakfast. Found this recipe from my Vitamix cookbook, I have modified the ingredients to use multigrain flour, and mango pulp instead of mango. Bread has a mild taste of cinnamon with mango flavor, which actually turned out tasty.

Ingredients

multigrain flour 2 cups
ground cinnamon 1/2 tsp (can add upto 2 tsp, if you like the taste)
baking soda 1/2 tsp
baking powder 1/2 tsp
salt 1/2 tsp
sugar 1/2 cup
eggs 2
oil (vegetable or saffola) 4 tblsp
mango pulp 1/2 cup (used can from Indian store, usually is sweetened)
lemon juice 1/2 tsp

Method

Preheat oven to 350 degrees fahrenheit.
Prepare a loaf pan by spraying it with some oil.
Mix the flour, cinnamon, baking soda, baking powder, and salt in a bowl. Set this aside.
Add sugar, oil, eggs, mango pulp, and lemon juice into Vitamix and secure the lid.
Blend this in variable speed 1 thru 5 for 45 seconds.
Pour the wet ingredients over the dry ingredients and mix well with hand or spatula.
Pour this mixture into the loaf pan and bake for 50-60 mins or until the toothpick or knife inserted in center comes out clean.
Slice them and serve with tea..
