Lemony Couscous

Couscous is a pasta made from semolina. It can be used as an alternate for rice.

Ingredients

couscous 1 cup
edamame 1/2 cup
baby spinach 1/2 cup
salt and pepper to taste
lime juice 1.5 tsp
butter 1 tblsp
water 2 cups

Method

Heat water, lime juice and couscous in a pan.
Bring to a boil, simmer till water is all absorbed approximately takes 3-4 mins.
Take a fork and fluff the cooked couscous.
Add the butter, edamame and spinach.
Turn of the heat, edamame and spinach will cook in the hot couscous, just enough to have a crunchy bite.
Sprinkle salt and pepper according to taste.
Enjoy as a side with dhal, stir fry veggies, gravy, add this to a cold salad or just by itself..
