Black Bean soup in slow cooker/stove top

A simple soup from the Mexican cuisine. So easy to make, perfect for the busy week night dinner as it is very filling and tasty. Needs no fancy ingredients can be fixed using pantry ingredients. I like to serve this soup with salsa and a dollop of sour cream. We enjoy this soup in the winter months, as the heat from jalapeño and cumin powder can keep the warmth and also engage the taste buds.. Many times we also have tortilla chips and guacamole on the side. Can never say no to chips and guacamole 🙂

Ingredients

For salsa
corn kernels 1 cup
tomato 1 chopped
onion 1 chopped
garlic 1 clove chopped
coriander 1 tblsp chopped
salt and pepper to taste
jalapeno pepper 1 chopped

For soup
oil 3 tsp
onion 1 small chopped
garlic 3 cloves chopped
tomato 2 chopped
bell pepper 1 cup chopped
jalapeno pepper 1 chopped
cumin powder 1 1/2 tsp
redchilly powder 1 tsp (can use 1/2 tsp for less spice)
black pepper powder 1/2 tsp
black bean dried 2 cups OR cooked black beans, 2 cans (15 fl oz each)
water 4 cups
salt to taste

Method

For salsa
Mix all the ingredients for salsa and set aside.

For soup on stove top
Wash and drain the black beans in the can. Set aside.
Heat oil in a pan, add garlic, onion, tomato, jalapeño, bell, pepper and sauté for few 3-4 mins.
Add the drained black beans, water, red chili powder, cumin powder, salt and black pepper powder.
Mix well and cook on high flame till it comes to a boil.
Reduce the flame to medium-low and simmer for 10 mins.
Using a hand blender, crush the beans slightly to get a thick texture.
Serve with a dollop of salsa and sour cream (optional).

For soup in slow cooker
Start the slow cooker with high setting and set timer for 4 hours.
Add the beans and enough water to soak the beans and let cook.
After 4 hours add rest of the ingredients with extra water as needed and cook for 2 more hours on high.
Using a hand blender, crush the beans slightly to get a thick texture.
Serve with a dollop of salsa and sour cream (optional).

Tips: If the soup tastes slightly bitter, while simmering add 1/2 tsp of sugar and extra cup of water for the bitter taste to vanish.
