Sankranthi is a harvest festival in the month of January in southern states Karnataka and Andhra states of India. Different states call this harvest festival by different names. For this festival (in karnataka and Andhra) we cook sweet pongal with newly harvested rice, moong dhal, milk and jaggery.
Ingredients
rice 1 cup
moong dhal 1/2 cup
jaggery 1 cup
milk 2 cups
water 3 cups
cardamom powder 1/4 tsp
nuts/raisins 1/4 cup (optional)
ghee 2 tbsp + 1 tsp
Method
Wash and cook rice with moong dhal with 2 cups of water and 2 cups of milk till rice is mushy
In a bowl heat 1 cup water and jaggery for 10 mins till it dissolves fully.
Now add the cooked rice and dhal to this jaggery syrup and cook for 15 mins with 2 tblsp of ghee or till all liquid is mostly absorbed.
Finally add cardamom powder, nuts/raisins fried in 1 tsp ghee (optional) and serve.
